Sahmbuja Pty Ltd operates a busy and well-regarded Japanese restaurant located in the beautiful Central Coast region. We pride ourselves on delivering an authentic Japanese dining experience, specialising in traditional sushi, sashimi, and omakase-style dishes prepared with the freshest seafood and premium local ingredients. To meet growing customer demand, we are seeking a skilled and passionate Sushi Chef to join our professional kitchen team.

Position Summary

The Sushi Chef will be responsible for preparing high-quality sushi and sashimi, managing seafood preparation (including filleting), maintaining product freshness and quality, and ensuring that all dishes are presented with the precision and artistry expected of authentic Japanese cuisine.

Key Duties and Responsibilities
  • Prepare a wide range of sushi dishes including nigiri, sashimi, maki, uramaki, temaki, and chirashi.
  • Fillet and portion various types of seafood with precision (saku-zukuri). Handle raw fish preparation, including filleting, naite/natte, and sharpening knives (hocho) for optimal performance.
  • Maintain the highest standards of food hygiene, freshness, and presentation.
  • Manage sushi bar to ensure consistent portion control.
  • Monitor inventory, order seafood and other ingredients as needed.
  • Train and supervise junior kitchen staff in sushi techniques and food safety.
  • Collaborate with the head chef to develop seasonal sushi menus and omakase courses.
Skills, Experience, and Qualifications Required
  • Certificate IV in Commercial Cookery or equivalent qualification.
  • Minimum 3 years of full-time experience as a sushi chef in a commercial Japanese restaurant.
  • Proven expertise in fish filleting, knife skills, rice preparation (shari), and sushi plating.
  • Strong understanding of Japanese culinary traditions and sushi terminology.
  • Knowledge of food safety and seafood handling standards.
  • Excellent attention to detail and ability to work under pressure during service.
  • Reliable, team-oriented, and committed to maintaining the restaurant’s reputation for quality.
