We are not just opening another fast‑café spot; we are launching Melbourne's very first authentic Friterie. A concept successfully emulated from the bustling street food scenes of Belgium and Amsterdam. We are bringing the gold standard of hand‑cut, double‑fried perfection and gourmet sauces to the heart of this city, and we are looking for a foundational Store Manager to help define the experience.

This is a unique opportunity to build a brand from the ground up, introduce a beloved European staple to a new market, and set the standard for high‑quality, quick‑service street food in Australia. You will need to be someone that is passionate about creating a team culture, that lives and breathes exceptional customer service and is driven to deliver fresh food on the go to our customers.

We need you to work closely with the business owner and the broader team to set the standard and help run this store as if it’s your own.

How you will stand above the restKey ResponsibilitiesOperational Excellence & Quality Control
  • Implement and enforce all Standard Operating Procedures (SOPs) for food preparation (e.g., potato peeling, hand‑cutting, double‑frying technique) and service execution to guarantee product consistency.
  • Manage inventory, oversee ordering, and conduct weekly stocktakes to control costs (focusing on raw potato yield and oil management).
  • Ensure full compliance with Victorian food safety standards, including temperature logging, cleaning schedules, and health inspections.
  • Recruit, train, schedule, and motivate the team of 8 staff members, fostering a positive, fast‑paced, and highly engaged work environment.
  • Lead by example during peak service times (the \"rush\"), managing the flow between the front‑of‑house (order taking) and the back‑of‑house (frying and assembly).
  • Conduct performance reviews and coach staff on upselling techniques (sauces and toppings) and complaint resolution.
  • Manage daily cash flow, perform end‑of‑day till reconciliation, and prepare bank deposits.
  • Monitor labor costs and sales targets, taking proactive steps to optimize profitability without compromising quality.
  • Handle administrative tasks, including payroll submission and managing supplier relationships.
Customer Experience & Brand Building
  • Act as the primary host and brand ambassador, ensuring every customer receives an authentic and memorable taste of the Friterie concept.
  • Actively solicit customer feedback (both in‑person and online) to drive continuous service and product improvements.
Qualifications & Experience
  • Must hold a valid Victorian Food Safety Supervisor certificate.
  • A passion for high‑quality ingredients and a dedication to operational discipline.
  • Exceptional organisational skills and the ability to thrive under pressure in a small, intense kitchen environment.
  • 2+ years of management experience in a high‑volume QSR or café environment.
