Spicers Hidden Vale have an exciting new opportunity for a full-time Sous Chef to join our passionate team in Grandchester, Southeast Queensland . As a member of our Salter Brothers Hospitality team, you’ll play a key role in creating meaningful experiences for both our guests and teammates through thoughtful service, attention to detail, and a commitment to continuous improvement.
About Homage RestaurantSet on 12,000 acres, just one hour from Brisbane and upon some of the most fertile farming soil in the Southern Hemisphere, Homage Restaurant has a real sense of place. With offerings from an outdoor coal pit, smokehouse, wood-fire and rotisserie. Sustainability is at the heart of everything we do - including sustainability of our people.
We have an 89-bed market garden, fermentation room, orchard, bee hives and free range farm onsite, meaning that much of the produce is from Spicers Hidden Vale itself and anything that’s not, is collected directly from nearby farms. It's the small things, like ‘family meal time’ before service, having the opportunity to work outside in the garden and interacting with our guests that make the difference.
The role and key duties- Assist in leading the kitchen team to provide a quality and profitable dining experience that is in line with the vision of the restaurant;
- Deliver all food experiences for the property including: restaurant dining; functions, weddings, events and experiential dining opportunities;
- Collaborate with our Executive Chef to create and develop new menus, ensuring consistency in taste and presentation;
- Train new culinary team members and provide ongoing training to existing team;
- Oversee the kitchen operation in the absence of our Executive Chef;
- Coordinate with front-of-house staff to ensure timely and accurate service;
- Communicate effectively with the kitchen team to maintain smooth operations;
- Ensure that the kitchen complies with health and safety regulations;
- Work closely with the Executive Chef to ensure the overall success of your team and the retreat.
- Minimum of 2 years experience as a Junior Sous / Sous Chef in a fine dining, high end or hatted restaurant environment (essential);
- A commitment to assist in leading, training and developing a small team;
- An understanding of BOH operations including ordering, stock takes, rostering, menu planning and financials;
- Ability and willingness to commence work on a rotating roster including weekends and public holidays;
- Located close to our restaurant with a reliable vehicle or a willingness to relocate.
