Overview

As a Sous Chef, you will utilize your creative flair and passion for food to ensure high quality food production for hotel outlets and events, meeting our Brand Standards. You will manage the Kitchen Team under the direction of the Head Chef ensuring quality is produced consistently, and ensure all hygiene, HACCP and WHS requirements are met.

Responsibilities

• Ensure a high level of clear and concise communication is maintained with all other hotel departments, being receptive to other departments operational and accounting requirements.
• Keep Chef De Cuisine/ Food, Beverage and Kitchen Manager informed of any issues that may arise.
• Attend and contribute to meetings and briefings as per schedule.
• Respond to and manage departmental change as required by the hotel, Hilton, government legislation or industry trends.
• Perform any other related duties and special projects as assigned by the Hotel.
• Ensure efficient level of service and prompt delivery of product within your area.
• Take reasonable care for the health and safety of themselves and others (team members, contractors, guests, members of the public) at the hotel.

Qualifications

• Prior experience as a Sous Chef or similar role.
• Experience in a la carte, function and events but grill station is highly regarded.
• Knowledgeable and practicing existing WHS guidelines & have a strong understanding of Food Safety, Food product, HACCP & Standard Operating Procedures.
• Ability to prioritize, organize and work well under pressure and contribute to a high integrity work culture.
• Excellent communication skills with the ability to work well in a team.
• A passion for cooking and creating delicious cuisine.
• Strong attention to detail and the ability to work under pressure.
• A positive, can-do attitude.
• A flexible approach to working hours and an ability to work shifts and weekends as required.
