What we're looking for:Demonstrated success as a Restaurant Manager (or higher) in a premium dining environment.
A confident, guest‑focused leader with strong people and performance management skills.
Solid commercial acumen across budgeting, labour control, and COGS.
Wine knowledge (WSET Level 2 or above highly regarded).
A hands‑on operator who thrives in busy service and enjoys being guest-facing.
Local knowledge or ties to the South Sydney area will be highly regarded.
