Job Description

Our client, The Trustee for Ghimire Holdings (Aus) Family Trust trading as Casa Nova Shellharbour, is seeking a high‑calibre Restaurant Manager to anchor its frontline leadership and elevate end‑to‑end service delivery. As a flagship Italian dining venue in the Shellharbour region, Casa Nova is known for its modern take on classic Italian cuisine, premium hospitality standards, and strong local patronage. This full‑time leadership role offers a competitive remuneration package of AUD 70‑80K aligned to capability and experience, and is positioned to drive operational excellence, workforce optimisation, and a seamless customer experience in a fast‑paced, high‑demand environment.

Job Tasks and Responsibilities
  • Oversee end‑to‑end FOH and BOH operations to ensure seamless, efficient, and service‑led daily performance.
  • Uphold elevated customer service standards and drive continuous improvement in overall guest experience.
  • Monitor and manage operational expenditure, identifying optimisation opportunities to achieve budget targets and strengthen profitability.
  • Lead workforce planning, including staff scheduling, performance management, and capability development.
  • Train, mentor, and coach new and existing team members to maintain consistent service excellence and operational discipline.
  • Forecast stock requirements and coordinate timely procurement of food, beverage, cleaning, and operational supplies.
  • Partner closely with the Head Chef and senior kitchen leaders to maintain cohesive FOH‑BOH communication and service execution.
  • Support menu development and seasonal refresh initiatives in collaboration with the senior culinary team.
  • Ensure strict adherence to OH&S, WHS, and all relevant hospitality compliance standards.
  • Prepare operational reports, performance insights, and improvement recommendations for senior management.
  • Cultivate a positive, high‑performance workplace culture, demonstrating proactive leadership and a solutions‑focused mindset.
To Be Considered for This Role
  • Be willing to relocate if you are interstate or in other cities.
  • Be available on both days at weekends and be able to work split shifts.
  • Preferably have a relevant Diploma qualification.
  • At least 2‑3 years of employment experience within the hospitality industry.
  • Have a current RSA certificate.
  • Customer‑focused and passionate about creating exceptional guest experiences.
  • Display excellent presentation, organisation and communication skills.
  • Leading from the front, ensuring your team understand what exceptional looks like every day.
