Head Barista / Café & Bar Manager Mr Wednesday Café & Bar – Fairfield, VIC

Mr Wednesday Café & Bar is seeking an experienced and motivated Head Barista / Café & Bar Manager to lead our coffee program and oversee daily front‑of‑house operations. This role is ideal for someone passionate about specialty coffee, leadership, and delivering exceptional customer experiences.

Key Responsibilities Coffee & Bar Operations

• Lead and manage all coffee operations, ensuring consistency and high quality in every cup
• Set and maintain coffee recipes, grinder settings, and equipment standards
• Train, mentor, and supervise baristas to maintain excellent coffee standards
• Oversee bar operations, including beverages, service flow, and presentation

Team Leadership & Management

• Supervise and support front‑of‑house staff, fostering a positive and professional work culture
• Manage staff rosters in line with business needs and wage budgets
• Provide ongoing training, performance feedback, and support to team members
• Ensure all staff adhere to workplace policies, procedures, and service standards

Customer Experience

• Deliver outstanding customer service and handle customer feedback professionally
• Build rapport with regular customers and contribute to a welcoming atmosphere
• Ensure service runs smoothly during busy periods

Operations & Compliance

• Oversee daily opening and closing procedures
• Monitor stock levels, place orders, and minimise waste
• Ensure compliance with food safety, OH&S, and workplace regulations
• Maintain cleanliness, organisation, and presentation of the café and bar

About You

• Proven experience as a Head Barista, Café Manager, or similar leadership role
• Strong coffee knowledge, including espresso extraction, milk texturing, and workflow
• Confident leader with excellent communication and people‑management skills
• Organised, reliable, and able to lead by example
• Passionate about hospitality and quality service
• Availability to work weekdays, weekends, and occasional evenings
