About the roleAs part of a fast‑paced hotel environment, you will support a large team of experienced hospitality professionals and help deliver an unforgettable Food & Beverage experience for our guests and customers.
Reporting to the Executive Chef, Executive Sous Chef and Senior Sous Chef, you will manage kitchen operations in our Gather Restaurant, Lovedale Bar + Grill and Conference & Events kitchens, with responsibilities tailored to your role (Commis, Demi‑Chef, Chef de Partie).
Key Responsibilities- Lead and supervise daily kitchen operations in your outlet.
- Collaborate with senior kitchen management on menu planning, implementation and execution.
- Maintain the highest quality standards in food preparation and presentation.
- Control ordering, stock, and wastage to manage food cost and production.
- Adhere to hygienic standards and HACCP compliance.
- Train and develop junior staff and apprentices.
- Ensure all food safety records are maintained and legislation is followed.
- Maintain personal grooming, cleanliness and hygiene standards. Skills & Experience
- At least 2‑3 years’ experience in a fast‑paced kitchen environment.
- Excellent communication, organisational and problem‑solving skills.
- Strong leadership and a proven record of managing junior staff.
- Understanding of food cost and production, and kitchen hygiene and safety procedures.
- Available to work rotating rosters, including evenings, weekends and public holidays.
- Trade cooking qualifications essential (Certificate III/IV in Commercial Cookery) or working towards.
- Full knowledge and practice of hotel occupational health and safety guidelines (WH&S).
- Must meet the requirements to work in Australia; no sponsorships available.
