Winmalee Tavern is a well‑established hospitality venue servicing the Blue Mountains and surrounding communities. The venue offers dining alongside bar and entertainment services, catering to a high volume of local patrons and families. With strong annual turnover and consistent food service demand, the kitchen plays a central role in the business’s operations.
The RoleWe are seeking a skilled and experienced Chef to join our kitchen team on a full‑time basis. This is a hands‑on role responsible for the preparation and delivery of high‑quality meals in a fast‑paced environment. The position is essential to maintaining food quality, operational consistency, and customer satisfaction.
Key Duties & Responsibilities- Planning and organising the preparation and cooking of food across lunch and dinner services
- Planning menus in consultation with management, taking into account customer preferences, seasonal availability and business requirements
- Estimating food and labour costs, monitoring portion control, and assisting with budgeting and cost management
- Ordering food supplies, monitoring stock levels, and liaising with suppliers to ensure quality and cost efficiency
- Preparing, seasoning and cooking a wide range of dishes in line with menu specifications and service standards
- Monitoring the quality, taste and presentation of dishes at all stages of preparation and service
- Discussing food preparation issues with management, front‑of‑house staff and kitchen staff to ensure smooth service delivery
- Demonstrating cooking techniques and advising staff on food preparation procedures and methods
- Supervising kitchen operations during service periods and coordinating workflow
- Selecting, training and supervising kitchen staff, including cooks and kitchen hands, to ensure operational efficiency
- Explaining and enforcing food safety, hygiene and workplace health and safety regulations at all times
- Overseeing correct food storage, portioning, freezing and preservation techniques to maintain quality and minimise waste
- Minimum Certificate III in Commercial Cookery or equivalent qualification
- At least 1 year of experience as Chef in a commercial kitchen
- Demonstrated experience in a busy, high‑volume hospitality environment
- Sound understanding of food safety standards, HACCP principles and NSW health regulations
- Availability to work evenings, weekends and public holidays
