Shyun Sumibiyaki is a premium Japanese charcoal grill restaurant, specialising in traditional sumibiyaki techniques using authentic binchotan charcoal to deliver deep, refined flavour. As a rapidly growing venue with a focus on craftsmanship, quality produce, and genuine cultural dining experience, we are seeking a skilled Chef to join our kitchen team.
This role is suited to an experienced Chef with strong Japanese culinary background and a passion for traditional grill cooking. Candidates with the ability to communicate confidently in both English and Japanese will be highly regarded, as this supports our cultural kitchen environment and our commitment to delivering an authentic dining experience.
Key Responsibilities- Preparing, cutting, seasoning, and grilling meat, seafood, and vegetables using traditional Japanese sumibiyaki techniques.
- Maintaining high standards of food presentation and flavour consistency across the menu.
- Overseeing stock rotation, food quality control, and safe handling of premium ingredients.
- Coordinating with the Head Chef to deliver menu offerings aligned with seasonal availability and house style.
- Training and supervising kitchen assistants where required.
- Monitoring cooking times, grill temperature, and charcoal management to ensure product excellence.
- Maintaining a clean, organised and compliant kitchen environment in line with food safety regulations.
- Contributing to menu planning, potential specials, and kitchen workflow improvement.
- Strong experience in Japanese cuisine (sumibiyaki, izakaya, robatayaki or related styles preferred).
- Ability to work under pressure in a fast-paced kitchen.
- Full-time availability for 38 hours per week, including weekends and evenings.
- Professional communication and teamwork skills.
- Bilingual capability in English and Japanese is highly desirable.
