Responsibilities
- Plan menus for the Donnybrook Hotel WA bistro, incorporating local South West ingredients and seasonal variations.
- Estimate food and labour costs for daily service and upcoming events, considering guest occupancy and tourism flow.
- Order food supplies, fresh produce, and dry stock required for uninterrupted kitchen operations.
- Monitor the quality of dishes at each stage of preparation and ensure consistent presentation.
- Discuss food preparation requirements, menu changes, and special dietary needs with the Hotel Manager and kitchen/front-of-house team.
- Demonstrate cooking techniques and guide junior cooks and kitchen staff in workplace methods and hotel standards.
- Prepare and cook meals for breakfast, lunch, dinner, and special functions.
- Enforce hygiene practices and food safety regulations applicable to a licensed WA hotel kitchen.
- Ensure compliance with proper food handling, temperature control, and storage procedures.
- Participate in selecting and training kitchen staff when required.
- Train cooks, apprentices and kitchen hands in Donnybrook Hotel WA’s cooking methods, hygiene procedures, and operational expectations.
- Freeze, preserve and store foods safely to maintain adequate stock levels and reduce wastage.
- AQF Diploma or Advanced Diploma of Hospitality (Commercial Cookery)
- AQF Certificate IV in Commercial Cookery plus relevant supervisory experience
- At least 1-3 years of relevant experience.
