Task & Responsibilities- Planning menus, estimating food costs, and ensuring profitability while maintaining quality.
- Ordering ingredients and supplies in coordination with the head chef, ensuring inventory is maintained without overstocking.
- Monitoring the quality of ingredients and dishes at all stages of preparation and presentation.
- Building and maintaining relationships with suppliers to negotiate favourable terms and ensure consistent delivery of quality products.
- Assisting in the preparation and design of all food menus, including seasonal menu creation, subject to approval by directors.
- Ensuring the kitchen operates efficiently and meets quality standards in a timely manner.
- Addressing and resolving any issues that arise in the kitchen, taking control of problematic situations as needed.
- Managing and training section staff, establishing work schedules, and assessing staff performance.
- Enforcing hygiene regulations, sanitation protocols, and safety standards.
- Maintaining a positive and professional approach in interactions with co-workers and customers.
- Managing and maintaining company cost of goods sold (COGS) and labour percentage targets.
- A level of skill commensurate with an AQF Associate Degree, Advanced Diploma or Diploma OR at least three years' relevant experience in lieu of formal qualifications.
- At least one year of relevant experience in addition to relevant qualifications
- Experience working in a fast pace & high volume environment
- Team focused with experience leading a kitchen team efficiently and productively
- Advanced food Safety awareness and compliance experience
- Impeccable health and hygiene
- Great time management skills
