About the BusinessAyam Penyet Ria is a well-established Indonesian restaurant located in Runcorn, QLD. Open daily from 11:00 AM to 9:00 PM, the restaurant serves a wide range of authentic Indonesian dishes. Our core operations include food preparation, dine-in services, and takeaway offerings, with a strong emphasis on maintaining traditional flavours.
We are currently seeking a qualified and experienced Chef with solid knowledge of Indonesian cuisine to join our team and support our growing operations.
About the PositionThe business requires a skilled and experienced Chef to meet increasing customer demand and maintain high-quality standards during continued growth.
Key ResponsibilitiesPlan, design and update Indonesian food menus, including Penyet, Geprek, grilled items, soups, rice dishes and desserts.
Estimate food, ingredient and labour costs to maintain profitability.
Order food supplies, manage stock levels and ensure freshness of all ingredients, including spices, meats, vegetables and sambal components.
Prepare, cook and present a wide range of Indonesian dishes such as:
- Ayam Penyet, Empal Penyet, Iga Penyet, Bebek Penyet
- Soto Ayam, Soto Betawi
- Nasi Goreng (Ayam & Iga), Nasi Kapau, Nasi Rendang
- Batagor, Gado-Gado, Rawon, Sayur Asem
- Grilled dishes such as Ayam Bakar, Iga Bakar, Sate Ayam
- House specials, sambal varieties and condiments
Maintain consistency in taste, portion size and presentation across all dishes.
Monitor dish quality throughout preparation, cooking and final presentation.
Ensure dishes meet Ayam Penyet Ria's traditional Indonesian flavour standards.
Ensure proper storage, freezing and preservation of food items where necessary.
Coordinate daily kitchen operations, menu updates and special requirements with managers, kitchen staff and service teams.
Provide guidance on cooking techniques, preparation methods and plating standards.
Maintain a clean, organised and hazard-free kitchen environment at all times.
Train, mentor and supervise junior kitchen staff on Indonesian cooking techniques, hygiene, food safety and efficient workflow.
Skills & Experience RequiredCompletion of Certificate IV in Commercial Cookery, equivalent qualification or higher.
Minimum 1 year of experience as a Chef, preferably in Indonesian cuisine.
Strong knowledge of traditional Indonesian ingredients, spices, sambal varieties and cooking methods.
Ability to work in a fast-paced environment and manage multiple orders.
Excellent communication, time-management and leadership skills.
Ability to maintain quality and consistency during high-volume service periods.
