About the Job

About Gambino

Gambino is an Italian restaurant set across two stunning levels — featuring a beautifully designed dining room on Level 5 and a rooftop oasis on Level 6 with sweeping views of the Dandenong Ranges. It’s the first venue of its kind in Glen Waverley and across Melbourne’s South East — a vibrant, elevated dining and rooftop experience just a 3-minute walk from Glen Waverley Station, with ample nearby parking. It’s the suburban escape you didn’t know you needed.

About Us

We’re a team of seasoned hospitality operators with five restaurants between us — four of which are proudly based right here in Glen Waverley. With Gambino, we’re bringing something truly unique to Kingsway: a venue that blends the sophistication of inner‑city dining with the warmth and energy of the suburbs. Our strong local following and support networks give us confidence — and we’re excited to reinvigorate this bustling dining strip with something fresh.

The Opportunity

We’re on the lookout for a Secondary Sous Chef or Senior Chef de Partie to join our kitchen leadership team and support our current Sous Chef and Head Chef. You’ll play an integral role in shaping our kitchen culture, supporting menu development, and maintaining our high standards for consistency and creativity.

Key Responsibilities
  • Preparing and executing high-quality dishes to standard
  • Supporting the senior team in planning and menu development
  • Maintaining a clean, organised and efficient section
  • Upholding all food safety and hygiene standards
  • Guiding and mentoring junior kitchen staff
Experience, Skills & Attributes
  • Minimum 2 years in a similar role
  • Strong communication and teamwork skills
  • A positive attitude and genuine passion for food
  • Attention to detail and experience with pizza preferred
The Offer

You’ll be joining a passionate and experienced kitchen team led by Garen Maskal (Owner/Chef – Sezar, The Black Toro) and Adrian Li (La Madonna, Rina’s Cucina, Commune Group). Expect a hands‑on environment that values creativity, balance, and growth — working with beautiful seasonal produce and contributing to a kitchen that evolves with the seasons.

Yes, it’s a new opening — so there’ll be a bit of chaos, a lot of energy, and plenty of excitement. But this is your chance to be part of one of the South East’s most anticipated new venues from the very beginning.
