About Pearl Expeditions

Pearl Expeditions operates M.Y. Paspaley Pearl — a 50-metre boutique expedition vessel carrying 30 guests through Australia's Kimberley, Papua New Guinea, Eastern Indonesia, and Borneo. Part of the Paspaley Group and guided by the philosophy Small Footprints. Infinite Horizons., we are expanding our resources in the expedition cruise sector and are looking for the right people to contribute to our business success.

About the Role

Supporting the Head Chef and Sous Chef in the day-to-day operation of the galley, this is a role for a motivated and skilled chef ready to bring their craft to an expedition environment. You'll contribute across all areas of food preparation and service — including pastry, desserts, and buffet — and help supervise the Galley Utility as part of a close-knit galley team.

This position requires unrestricted Australian working rights. Australian or New Zealand citizens, or Australian permanent residents only. Due to operational requirements, working holiday visas cannot be accepted for this role.

Your Responsibilities

  • Prepare and present high-quality meals for guests, officers, and crew across all service areas

  • Assist in the preparation of breads, pastries, desserts, and baked goods to daily menu standards

  • Maintain food safety, hygiene, and sanitation standards in all preparation areas

  • Support buffet setup and replenishment across guest and crew areas

  • Assist with provisioning, stock rotation, and galley cleaning schedules

Skills and Experience

  • Previous experience as a Commis Chef or apprentice in a fine dining, luxury hotel, or premium resort kitchen

  • Experience with pastry, bread, and dessert preparation an advantage

  • Experience aboard a yacht, cruise vessel, or remote lodge highly desirable

  • Ability to live and work in a communal, at-sea environment for extended contracts (up to 3 months)

  • Current STCW safety certifications are essential for this sea-going role

  • Approved Certificate of medical fitness (Marine Order 76)

  • Approved food handling / Hygiene course

  • Responsible service of Alcohol (RSA) valid for Western Australia, Queensland, and Northern Territory
